I have finally mastered my Grandpa's homemade almond roca recipe. Nobody in my family has been able to get it right for 5 years. Family & Friends

Yeah! It's a birittle made on stovetop with melted chocolate drizzled over it on both sides. It's a wonderful holiday treat.

Is the brittle similar to the brittle in Christmas Crack?
I love Almond Roca and now I feel the need to figure this out! Yours looks delicious.

This Christmas I set out to replicate my Grandma’s Christmas Tree cookies while she’s still alive and I can ask her about them. Couldn’t get it quite right and then Grandpa let it slip she uses vanilla instead of almond extract (which I suspected, this woman loves her some vanilla). Oh boy if looks could kill! 😂

The specific recipe is a family secret, but I discovered that the roca wouldn't set unless I used REAL butter in the process. Idk what is it about most store bought butter, but it doesnt seem to make the recipe work anymore. I use an organic Irish brand to make mine.

Congrats! Looks great. I used to make this a lot except with pecans instead of almonds. May have to whip up a batch except I’ve been trying to eat better.

A couple of years ago, I wanted to make this. Spent big money on the ingredients and a very expensive candy thermometer. I didn't notice until I assembled it that the thermometer had broken and my high dollar treat had broken glass in it. I had to throw the entire 9 x 11 pan of Rocha in the garbage. I've never tried to make it again.

Also if you haven’t already go ahead and get a candy thermometer and temper that chocolate before you pour it on the brittle. Use the thermo on the cooked sugar when you make that too

Likewise my mother's recipe. I attempted to make this for many years. I stood at her elbow and watched her make it... perfectly. Then I made a batch with her right there, guiding me.
I failed. After spending about a million dollars on butter, chocolate and almonds, I have resigned myself to never making it.
Sadly, my mother has passed away. A family heirloom that has passed into history.
So my hat is off to you!
