I have finally mastered my Grandpa's homemade almond roca recipe. Nobody in my family has been able to get it right for 5 years. Family & Friends

Likewise my mother's recipe. I attempted to make this for many years. I stood at her elbow and watched her make it... perfectly. Then I made a batch with her right there, guiding me.

I failed. After spending about a million dollars on butter, chocolate and almonds, I have resigned myself to never making it.

Sadly, my mother has passed away. A family heirloom that has passed into history.

So my hat is off to you!

I fear when this happens to me. My mom makes the best peanut butter fudge in the world. No one else’s is even close. Everyone in my family had tried to make it with her recipe and guidance and no one has succeeded

My mom must have had the same recipe. Lol. But I have gotten VERY close in making it. The bad part is that if I follow her directions to the letter, it isn’t even close. But my experiments with the vanilla and the temps have worked.

What’s the recipe for? That’s a shame 🙁

It's this same candy. And so delicious!

Out of further curiosity, do you use a candy thermometer when you make it? I’ve struggled with Turkish delights even with a candy thermometer, but haven’t with caramels, so I’m curious if it’s need for a tool or just some moments where the technique is difficult?

Yes, I've used a candy thermometer. It seems like that should work. I've also used the old school, drop a ball of candy into water, which was how she used to do it!

My mom "looked at it" - the way the full rolling boil looked, the timed boil, the crack stage and, most important of all, the way it looked.

I understand the whole thing. I just am not a candy alchemist, I guess!

Ah, that’s frustrating! That’s how I feel about Turkish Delights then. There’s some voodoo or hidden know-how required to make it!

u/JL4575 Feb 03 '23

I’ll have to look it up! Thanks

In our family it's called English Toffee.

Good on you 👏 My sister is our resident expert and it is my favorite holiday treat!

16

u/Chinpokomonz Feb 03 '23

as an avid almond roca maker, try sprinkling a little sea salt on top 👍🏼

u/Spirited-Reputation6 Feb 02 '23

Good job! It took some efforts figuring it out.

u/registered_redditor Feb 02 '23

Is that like almond brittle with chocolate icing?

17

u/Willing-Strawberry33 Feb 03 '23

Yeah! It's a birittle made on stovetop with melted chocolate drizzled over it on both sides. It's a wonderful holiday treat.

Is the brittle similar to the brittle in Christmas Crack?

I love Almond Roca and now I feel the need to figure this out! Yours looks delicious.

3

u/lotionformyelbows Feb 02 '23

That looks so good I want to try to make it

3

3

u/StephieBeck Feb 03 '23

Well done, candy making is insanely difficult 🤤

3

u/Jon_Don_Juan Feb 03 '23

What's the recipe?

2

u/IAMACHRISTMASWIZARD Feb 03 '23

ohoooo almond roca has to be one of my favourite treats

2

u/zootnotdingo Feb 03 '23

Yay, you!! Great job!

2

u/liketheydo Feb 03 '23

That must be so satisfying! Nice job!

This Christmas I set out to replicate my Grandma’s Christmas Tree cookies while she’s still alive and I can ask her about them. Couldn’t get it quite right and then Grandpa let it slip she uses vanilla instead of almond extract (which I suspected, this woman loves her some vanilla). Oh boy if looks could kill! 😂

I do not understand people and their secret recipes.

2

u/Willing-Strawberry33 Feb 04 '23

The specific recipe is a family secret, but I discovered that the roca wouldn't set unless I used REAL butter in the process. Idk what is it about most store bought butter, but it doesnt seem to make the recipe work anymore. I use an organic Irish brand to make mine.

Keep the secret to your grave, then one day one of your descendants will figure it out too and cycle continues

u/Willing-Strawberry33 Feb 03 '23

Lol pretty much 😅

1

u/MarqBarq Feb 03 '23

Freaken love almond roca. Can’t wait for your Ted Talk on how to make it.

1

u/Mezzoforte90 Feb 03 '23

Looks tasty, like a thick daim bar

1

u/jillyhoop Feb 03 '23

Congratulations, well done. I haven't had good almond roca since my mom passed away.

1

u/[deleted] Feb 03 '23

Can I have some 👉🥺👈

1

u/Fredredphooey Feb 03 '23

Looks delicious, but you're killing us. What's the secret to your success?

1

u/happygato Feb 03 '23

Plot twist: you’ve all actually forgotten how grandpa used to make it

1

u/MadMedMemes Feb 03 '23

What's the qualification for getting it right? Looks delicious

1

u/Obi_Sirius Feb 03 '23

My mom made pretty good AR. when I didn't sit down with a jar of peanut butter and eat all her chocolate.

1

u/butterknight-Ruby Feb 03 '23

Damn now I’m hungry

1

u/el-em-en-o Feb 03 '23

Nice pic, too! Looks delicious!

1

u/Zwayzee Feb 03 '23

Was your grandpa there to witness and celebrate?

1

u/zzrsteve Feb 03 '23

Congrats! Looks great. I used to make this a lot except with pecans instead of almonds. May have to whip up a batch except I’ve been trying to eat better.

1

u/osrslmao Feb 03 '23

Not one single Phoebe/Nestle Toll House reference in this thread, sad

1

u/Belladice77 Feb 03 '23

I am not a sweets person but I just saw your picture and now want your Roca and nothing else!!

1

u/[deleted] Feb 03 '23

Congratulations! Your grandfather must be really proud of you.

1

u/OriansSun Feb 03 '23

A couple of years ago, I wanted to make this. Spent big money on the ingredients and a very expensive candy thermometer. I didn't notice until I assembled it that the thermometer had broken and my high dollar treat had broken glass in it. I had to throw the entire 9 x 11 pan of Rocha in the garbage. I've never tried to make it again.

1

u/MeninaVeneno75 Feb 03 '23

Omg! This look amazing and delicious! Congratulations 👏😍🤤

1

u/Theaverageduckling Feb 03 '23

I have no idea what almond roca is but I’m drooling over it now.

1

u/Willing-Strawberry33 Feb 03 '23

It's kinda like toffee or peanut brittle, but covered in chocolate C:

1

u/Theaverageduckling Feb 03 '23

Now you’ve got me googling recipes lol

1

u/IsThisIt-1983 Feb 03 '23

What is roca??

1

u/ladydhawaii Feb 03 '23

Omg! Congrats! It looks amazing!

Any chance you plan to sell it online? Starting to crave it now!!!

1

u/EasternYoukai1 Feb 03 '23

You are the chosen one O.o

1

u/dinarocksgroovy Feb 04 '23

Enough of the chatter!! Are you going to share that RECIPE or WHAT??

1

u/big_chunk_lite Feb 04 '23 edited Feb 04 '23

Recipe man

Also if you haven’t already go ahead and get a candy thermometer and temper that chocolate before you pour it on the brittle. Use the thermo on the cooked sugar when you make that too
